The inspiration for this recipe came from cooking light.
- 1 TBS EVOO
- 1 TBS fresh oregano
- 1TBS fresh rosemary
- package of chicken tenders
Pound chicken tenders and marinate in EVOO, oregano and rosemary for 1/2 hour. Salt and pepper and then grill.
- 1/8 tsp crushed red pepper (more for spicy)
- 8 cloves of garlic
- 6 oz of fresh spinach
- 1 pkg of fresh basil
- 1/2 cup chopped drained oil-packed sun dried tomatoes
- 2 TBS of oil from sun-dried tomatoes
- salt and pepper to taste
Put all the ingredients in food processor and puree
- Slices of cracked wheat sour dough
- slices of fresh mozzarella cheese
Assemble sandwich. Bread, mozzarella, pesto, chicken, pesto, mozzarella, bread. Brush bread with EVOO and drill on panini pan (3 minutes per side on med high).
Delicious.
